Broiled Salmon with Wasabi Sauce

Well well well look who's back! I'm so sorry for my absence and there are too many excuses to share but the best one is....I got engaged!! So fun, crazy, and overwhelming! But I'm back in the swing of things and ready to rock it out in the kitchen. Had to tell myself "don't be lazy!". So it's Sunday, I've worked out, cleaned, grocery shopped, watched my fantasy team get a beatdown (thanks for the big 3 pts. Julio Jones, cause I'm sure you are reading this) and I decide it's time to cook (rather than write up a lesson plan!). "The Bear" aka dad would be proud because it's salmon for dinner! This is the first salmon dish I ever made back in the day and it's based off a recipe that many, many, many years ago I ate at an ex's house. I had always refused to eat salmon but the awkward eating at your significant other's house will force you to eat a lot of things you wouldn't for the sake of not looking like a total beyotch! This recipe is so easy and yummy it is sure to win anyone over who thinks they don't like salmon. I get all the flavors of delicious salmon sashimi but with the warm, crust from the grill or oven. Be careful with your wasabi though unless you like burning off your tastebuds!

Ingredients
1 (1/2 lb) fresh salmon filet
1 tbsp. olive oil
1 tbsp. low sodium soy sauce
1 tsp. prepared wasabi
Salt & pepper

Wasabi Sauce
2 tbsp. olive oil mayonnaise (or whatever you have)
Juice of 1/2 lemon
1 tbsp. soy sauce
2 tbsp. prepared wasabi (start with 1 tbsp. depending on your spice level)

Let's get this party started!! Start my mixing the olive oil, soy, wasabi, and salt and pepper for the marinade and spooning over the salmon.



Let the salmon marinate in the refrigerator for about 30 minutes. While it's marinating, mix up the wasabi sauce. Mix the mayo, wasabi, lemon juice, and soy. You can make this sauce a few hours in advance to save time. 



Preheat your broiler (or grill) to high. Place the salmon on a foil lined baking sheet (or just foil if you are grilling) and spoon half of the wasabi sauce over. 



Broil for 7-8 minutes depending on thickness until the salmon is opaque in the center. Serve up over the veggies of your choice and drizzle with the remaining sauce. Enjoy!!



 Now I need to take care of my mega sweet tooth!
